Harvest Vine to Barrel

The date we pick the grapes is the most important decision in the entire winemaking process— it sets the tone for the vintage’s potential. No pressure.

If the date we pick determines the wine’s potential (or style), the farming up to that moment determines the wine’s quality. The role of the winery is to capture and maximize what the vineyard cultivates. When grapes arrive in excellent condition due to excellent farming, the hand of the winemaker can be in the background because much of the work is behind them.

Still, what happens in the winery matters. In this issue of The DuMOL Dirt, we’ll explore the who, what, where, when, and how of harvest—from farm to fermentation. Let’s go!
